Ingredients

  • 1 ripe pineapple
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon melted butter
  • 1 tablespoon honey (optional)
  • 1/4 teaspoon salt
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Select a ripe pineapple; choose one that is sweet-smelling with a slightly soft texture.
  2. Peel and core the pineapple, slicing it into 1-inch thick slices.
  3. In a bowl, combine brown sugar, cinnamon, nutmeg, melted butter, honey (if using), and salt to prepare the marinade.
  4. Place pineapple slices in a resealable bag or shallow dish, pour marinade over, ensuring they are well coated, and let sit for at least 30 minutes.
  5. Preheat the grill to medium-high, heating it for 10 to 15 minutes.
  6. Brush grill grates with oil to prevent sticking.
  7. Grill the marinated pineapple slices for about 3 to 4 minutes on each side until caramelized.
  8. Check for doneness; the slices should be tender but not mushy.
  9. Remove from grill and transfer to a serving platter.
  10. Optionally drizzle with honey and sprinkle with fresh mint leaves. Serve warm.
