- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
- 1 cup semi-sweet chocolate chips
- ½ cup heavy cream
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch springform pan. Wrap the pan with foil to prevent leaks.
- In a bowl, whisk melted butter, sugar, eggs, and vanilla. Stir in cocoa, flour, salt, and baking powder until combined. Spread evenly in the pan.
- Bake the brownie base for 20 minutes and allow to cool slightly.
- Beat cream cheese and sugar until smooth, then add eggs one at a time. Mix in vanilla and sour cream until creamy. Pour over the cooled brownie layer.
- Bake for 45 to 50 minutes until the center is set. Let cool inside the oven with the door slightly open for 1 hour.
- Chill in the fridge for at least 4 hours or overnight.
- For the ganache, heat cream, pour over chocolate chips, let sit, then stir until smooth. Spread over the chilled cheesecake.
- Garnish with whipped cream or chocolate curls, slice, and serve.

Make sure to chill the cheesecake for the best texture and cut with a hot knife for neat slices.
