Ingredients

  • 1 head of cauliflower, chopped
  • 2 cups cooked chicken, shredded
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup cream cheese, softened
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare baking dish.
  2. Toss cauliflower with olive oil, salt, and pepper; roast for 20 minutes until tender.

  4. Fold roasted cauliflower into the chicken mixture.
