- 1 head of cauliflower, chopped
- 2 cups cooked chicken, shredded
- 1/2 cup buffalo sauce
- 1 cup shredded cheese (cheddar or a blend)
- 1/2 cup cream cheese, softened
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Olive oil or cooking spray
Instructions
- Preheat the oven to 350°F (175°C) and prepare baking dish.
- Toss cauliflower with olive oil, salt, and pepper; roast for 20 minutes until tender.
- Mix shredded chicken, buffalo sauce, cream cheese, and half the shredded cheese.
- Fold roasted cauliflower into the chicken mixture.
- Transfer to baking dish, top with remaining cheese and green onions.
- Bake for 25-30 minutes until bubbly and golden.
- Let sit for 5-10 minutes before serving; season to taste.
Notes
For milder flavor, reduce buffalo sauce; use a mix of cheeses for better melt.
