Ingredients

  • 2 pounds butternut squash, peeled and cubed
  • 2 Honeycrisp apples, peeled, cored, and cubed
  • Olive oil
  • Salt
  • Black pepper
  • 2 tablespoons pure maple syrup, divided
  • 1/2 teaspoon ground, dried sage
  • 1 1/2 teaspoons Herbes de Provence
  • 1/2 pound sweet Italian sausage, crumbled
  • 2 small fennel bulbs, cored and thinly sliced
  • 1 onion, quartered and thinly sliced
  • 1 cup grated Gruyere cheese
  • Fresh sage leaves, for garnish

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with foil lightly misted with cooking spray.
  2. In a large bowl, combine cubed butternut squash and apples, drizzle with olive oil, and add salt, black pepper, 1 tablespoon maple syrup, dried sage, and Herbes de Provence. Toss to coat.
  3. Spread the mixture onto the prepared baking sheet and roast for about 35 minutes, stirring occasionally.
  4. While roasting, heat a skillet over medium-high heat with olive oil and add crumbled sausage. Cook until browned, then set aside.
  5. Add sliced fennel and onion to the skillet, caramelizing for about 10-12 minutes until golden.
  6. Once the squash and apples are done, switch the oven to broil.
  7. In a large bowl, combine roasted squash and apples with sausage, fennel, onion, and remaining maple syrup. Mix well and adjust seasoning.
  8. Transfer the mixture into a 9×13 baking dish.
  9. For garnish, fry sage leaves in hot oil for about 20 seconds, then drain.
  10. Top casserole with grated Gruyere cheese and broil until melted and golden.
  11. Garnish with fried or fresh sage and serve hot.

Notes

Choose a firm butternut squash for the best flavor. Consider adding nuts for added crunch. Adjust sweetness with maple syrup as desired.
