1 lb chicken breast or thighs, diced
12 oz beef sausage, sliced
1/2 lb shrimp, peeled and deveined
2 tbsp olive oil
1 onion, diced
1 bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
2 cups long-grain white rice
4 cups chicken broth
1 can (14.5 oz) diced tomatoes
2 tbsp Cajun seasoning
1 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp black pepper

Instructions
Heat olive oil in a large pot over medium-high heat. Add chicken and beef sausage; cook until browned.
Pour in chicken broth, tomatoes, Cajun seasoning, smoked paprika, thyme, and black pepper. Bring to a boil.
Reduce heat, cover, and simmer for 20-25 minutes until rice is tender.
Fold in shrimp, cover, and let sit for 5 minutes before serving.
