- 1 lb andouille sausage, sliced
- 4 cups diced potatoes
- 1 cup chopped onions
- 1 cup chopped bell peppers
- 1 cup chopped celery
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Cajun spices to taste
- Salt and pepper to taste
Instructions
- Brown the andouille sausage in a large pot over medium heat until fragrant.
- Add diced potatoes, chopped onions, bell peppers, and celery, and cook for about 5 minutes.
- Stir in Cajun spices and let sauté for another minute.
- Pour in the chicken broth and bring to a rolling boil.
- Reduce heat, cover, and simmer until potatoes are tender (15-20 minutes).
- Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
- Season with salt and pepper to taste and serve hot.
