Ingredients

  • 1 lb andouille sausage, sliced
  • 4 cups diced potatoes
  • 1 cup chopped onions
  • 1 cup chopped bell peppers
  • 1 cup chopped celery
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Cajun spices to taste
  • Salt and pepper to taste

Instructions

  1. Brown the andouille sausage in a large pot over medium heat until fragrant.
  2. Add diced potatoes, chopped onions, bell peppers, and celery, and cook for about 5 minutes.
  3. Stir in Cajun spices and let sauté for another minute.
  4. Pour in the chicken broth and bring to a rolling boil.
  5. Reduce heat, cover, and simmer until potatoes are tender (15-20 minutes).
  6. Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
