Ingredients

  • 1 lb Cajun sausage, sliced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheese (such as cheddar or Monterey Jack)
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Olive oil for cooking
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
  3. Add the diced onion, bell pepper, and minced garlic to the skillet, and sauté for another 3-5 minutes until vegetables are softened.
  4. Stir in the Cajun seasoning and mix well.
  5. Pour in the heavy cream and bring to a simmer. Allow it to cook for a few minutes until slightly thickened.
  6. Add the cooked pasta and shredded cheese to the skillet, stirring until the cheese is melted and everything is well combined.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped parsley if desired.

Notes

Adjust the level of spice by choosing a mild or hot Cajun sausage. For a lighter version, use half-and-half instead of heavy cream.
