Ingredients

  • 2 medium red beets, cooked and sliced
  • 4 – 5 radishes, thinly sliced
  • 2 cups mixed salad greens
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Optional: crumbled feta cheese or goat cheese

Instructions

  1. Arrange the salad greens on a large platter.
  2. Alternate slices of beet and radish on top of the greens to create a striped effect.
