Ingredients

- 2 medium red beets, cooked and sliced
- 4–5 radishes, thinly sliced
- 2 cups mixed salad greens
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Optional: crumbled feta cheese or goat cheese
Instructions
- Arrange the salad greens on a large platter.
- Alternate slices of beet and radish on top of the greens to create a striped effect.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad.
- If desired, sprinkle crumbled feta or goat cheese on top.
- Serve immediately and enjoy!
