- 200g pasta of your choice
- 2 leeks, cleaned and sliced
- 200g mushrooms, sliced
- 200g Gruyere cheese, grated
- 200ml heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and sauté until they are soft and caramelized, about 8-10 minutes.
- Add the sliced mushrooms to the skillet and cook until they are tender, about 5 minutes.
- Reduce the heat and pour in the heavy cream, stirring to combine. Cook for another 2-3 minutes until the sauce thickens slightly.
- Stir in the grated Gruyere cheese until melted and creamy. Season with salt and pepper to taste.
- Toss the cooked pasta in the skillet with the creamy leek and mushroom sauce until well coated.
- Serve hot, garnished with fresh parsley.
Notes
Make sure to clean the leeks thoroughly as dirt can hide between the layers. For a richer flavor, consider adding some garlic when sautéing the leeks. Experiment with different pasta types like penne or fettuccine.
