- 2 cups grated carrots
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 4 large eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 1 cup crushed pineapple, drained
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup chopped walnuts or pecans (optional)
- Cream cheese frosting (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch springform pan, lining the bottom with parchment paper.
- In a large bowl, mix grated carrots, granulated sugar, brown sugar, and vegetable oil until combined. Add eggs one at a time, beating well.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt. Fold dry ingredients into the carrot mixture until just combined. Stir in crushed pineapple and nuts if using.
- Pour half of the carrot cake batter into the prepared springform pan.
- In a clean bowl, beat cream cheese, sour cream, powdered sugar, and vanilla extract until smooth. Spread cheesecake mixture over the first layer.
- Spoon the remaining carrot cake batter over the cheesecake layer.
- Bake in the preheated oven for 50–60 minutes, testing for doneness with a toothpick.
- Allow to cool at room temperature for an hour, then refrigerate for at least 4 hours.
- Before serving, frost the top with cream cheese frosting and add optional toppings.
Notes
For best results, chill overnight before serving. Use room temperature ingredients for smoother mixes.
