Ingredients

  • 2 medium potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 1 inch ginger, minced
  • 4 cloves garlic, minced
  • 1 serrano pepper, diced
  • 2 tomatoes, pureed
  • ½ cup vegetable broth
  • ½ cup water
  • 2 tablespoons vegetable oil or ghee
  • ½ teaspoon mustard seeds
  • ½ teaspoon cumin seeds
  • 1 bay leaf
  • ¼ teaspoon asafoetida (hing)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon coriander powder
  • ½ teaspoon cumin powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Prepare the cauliflower and potatoes by rinsing, cutting, and soaking the potatoes in cold water.
  2. Heat oil in a pan, temper mustard and cumin seeds along with a bay leaf.
  3. Sauté onions until caramelized, then add ginger, garlic, and serrano pepper.
  4. Add spices to build the masala, followed by tomatoes, and cook until oil separates.
  5. Add prepped cauliflower and potatoes, season with salt, and pour in broth and water.
  6. Simmer until vegetables are tender, adjusting consistency with water if necessary.
  7. Finish with garam masala and fresh cilantro, serve hot with rice or bread.

Notes

To enhance flavor, consider adding a squeeze of lemon juice before serving and taste the curry throughout the cooking process for seasoning adjustments.
