- 1 medium cauliflower, broken into florets
- 2 medium potatoes, peeled and cubed
- 1 onion, finely chopped
- 1 inch ginger, minced
- 4 cloves garlic, minced
- 1 serrano pepper, diced
- 2 tomatoes, pureed
- ½ cup vegetable broth
- ½ cup water
- 2 tablespoons vegetable oil or ghee
- ½ teaspoon mustard seeds
- ½ teaspoon cumin seeds
- 1 bay leaf
- ¼ teaspoon asafoetida (hing)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 tablespoon coriander powder
- ½ teaspoon cumin powder
- 1 teaspoon garam masala
- Salt, to taste
- Fresh cilantro, for garnish
Instructions
- Prepare the cauliflower and potatoes by rinsing, cutting, and soaking the potatoes in cold water.
- Heat oil in a pan, temper mustard and cumin seeds along with a bay leaf.
- Sauté onions until caramelized, then add ginger, garlic, and serrano pepper.
- Add spices to build the masala, followed by tomatoes, and cook until oil separates.
- Add prepped cauliflower and potatoes, season with salt, and pour in broth and water.
- Simmer until vegetables are tender, adjusting consistency with water if necessary.
- Finish with garam masala and fresh cilantro, serve hot with rice or bread.
Notes
To enhance flavor, consider adding a squeeze of lemon juice before serving and taste the curry throughout the cooking process for seasoning adjustments.
