Ingredients
3/4 cup fresh lime juice
1/4 cup packed fresh mint leaves, plus extra sprigs for garnish
1/2 cup granulated sugar (for drink and optional rim)
1/2 cup non-alcoholic white spirit alternative (e.g., non-alcoholic rum)
1/2 cup non-alcoholic coconut spirit alternative (e.g., non-alcoholic coconut rum)
1 cup canned coconut milk (not cream of coconut)
Sparkling water, chilled
Crushed ice, plenty of it
Pomegranate arils (for garnish)
Fresh cranberries (for garnish)
Rosemary sprigs (for garnish)
Lime wheels or wedges (for garnish)
1/4 teaspoon lime zest (for optional rim)

Instructions
Prepare your glass by combining 1 tablespoon granulated sugar with 1/4 teaspoon lime zest on a plate. Moisten the rim of the glass with a lime wedge and dip into the mixture.
In a sturdy mixing glass, muddle fresh mint leaves with 1 teaspoon of granulated sugar.
Add fresh lime juice, non-alcoholic white spirit, non-alcoholic coconut spirit, and coconut milk. Stir well.
Chill the mixture by shaking with ice for 15-20 seconds or stirring if mixed directly in the glass.
Fill the glass with crushed ice, then gently pour in chilled sparkling water.
Stir gently to incorporate and garnish with mint, pomegranate arils, cranberries, rosemary, and lime wedges.
Serve with a straw and enjoy!
