Ingredients

  • 1 pound lean ground beef
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • ½ cup mayonnaise
  • 2 tablespoons onion, grated
  • 2 tablespoons ketchup
  • 1 tablespoon pickle relish
  • 2 teaspoons yellow mustard
  • 1 teaspoon white vinegar
  • ¼ teaspoon paprika
  • 4 burrito-sized flour tortillas
  • 16 slices cheddar cheese, thinly sliced
  • ½ cup onion, finely chopped
  • ½ cup dill pickles, chopped
  • 1 tablespoon olive oil

Instructions

  1. Make the Sauce: In a small bowl, mix together the mayonnaise, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika. Whisk until smooth and well combined. Cover and refrigerate.
  2. Cook the Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes.
  3. Season the Beef: Drain excess grease, return to heat, and add salt, black pepper, garlic powder, and Worcestershire sauce. Mix well and remove from heat.
  4. Prepare the Tortillas: Lay tortillas flat. On one half of each, place 2 slices of cheese.
  5. Add the Filling: Divide beef mixture, chopped onions, and dill pickles on top of cheese. Add 2 more slices of cheese on top.
  6. Fold and Cook: Fold tortillas over the filling. Heat skillet with olive oil. Cook quesadillas for 2-3 minutes per side until crispy and cheese melts.
  7. Cut and Serve: Let rest, then cut each quesadilla into 2-3 pieces. Serve with the prepared burger sauce.
