- 9 oz tortellini pasta
- 1 lb ground beef
- 1 cup enchilada sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside.
- In a large skillet, cook the ground beef over medium heat until browned and drain excess fat.
- Add the diced onion and garlic to the skillet and sauté until softened, about 3–4 minutes.
- Stir in the enchilada sauce, cumin, salt, and pepper. Cook for 2–3 minutes until warmed.
- Add the cooked tortellini to the skillet and mix until fully combined.
- Sprinkle the shredded cheese on top, cover, and cook for another 2–3 minutes until the cheese is melted.
- Serve hot, garnished with cilantro if desired.
Notes
Feel free to swap ground beef for ground turkey or a meat alternative. Leftovers reheat well for lunches.
