Ingredients

  • 1 lb ground chicken
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups cooked rice
  • 1 cup shredded cheese (mozzarella and cheddar blend)
  • 4 large tortillas
  • Salt and pepper to taste
  • Oil for toasting

Instructions

  1. Heat a skillet over medium heat and cook the ground chicken until browned.
  2. Add diced bell pepper and onion, cooking until softened.
  3. Stir in cooked rice and season with salt and pepper.
  4. Lay a tortilla flat and fill it with the chicken and rice mixture along with shredded cheese.
  5. Roll the tortilla tightly to enclose the filling.
  6. Heat oil in a pan and toast the burritos seam side down until crispy and golden brown.
