Description

A fruity, no-bake twist on the classic Italian dessert! This cherry amaretto tiramisu features luscious mascarpone filling, juicy cherry syrup, and layers of ladyfingers — perfect for summer entertaining or holiday desserts.

  • 4 cups fresh Bing or Lambert cherries, pitted and halved
  • ⅓ cup water
  • ½ cup sugar
  • 2 teaspoons lemon juice
  • 24 tablespoons Amaretto liqueur (adjust to taste)
  • For the Mascarpone Filling:
  • 16 ounces mascarpone cheese
  • ¾ cup sugar
  • 1 ½ cups heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • ⅔ cup prepared cherry syrup
  • For Assembly:
  • 1 (7 oz) package of Savoiardi (ladyfinger) cookies
  • Optional: extra whipped cream or cherries for topping

Instructions

  1. Make the Cherry Syrup: In a saucepan, simmer cherries and water over medium heat, mashing the cherries to release juice. Strain out solids using a fine mesh sieve. Stir in sugar and lemon juice while the syrup is warm. Let cool, then add Amaretto liqueur to taste.
  2. Make the Mascarpone Filling: Whip the cream to stiff peaks and set aside. In a large bowl, beat mascarpone, sugar, vanilla, almond extract, and ⅔ cup cherry syrup until smooth. Fold the whipped cream into the mascarpone mixture gently until fully combined.
  3. Assemble the Tiramisu: Quickly dip ladyfingers into the cherry syrup and layer them at the bottom of your serving dish. Spread half of the mascarpone filling over the top. Repeat with another layer of dipped ladyfingers and the remaining filling. Pipe the top layer if desired for a clean finish.
  4. Chill and Serve: Cover and refrigerate for at least 6 hours or overnight to set. Before serving, garnish with additional whipped cream, fresh cherries, or a dusting of cocoa powder.

Notes

Use frozen cherries if fresh aren’t in season. You can omit the Amaretto for a non-alcoholic version or replace with cherry juice. Keeps well in the fridge for up to 3 days.
