Ingredients

  • 1 1/4 cups all-purpose flour, plus more for dusting
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/4 cup cold vegetable shortening, cut into small pieces
  • 5 to 7 tablespoons ice water
  • 4 cups fresh or frozen pitted cherries, thawed and drained if frozen
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon almond extract
  • 1 tablespoon lemon juice
  • Pinch of salt
  • 1 cup semi-sweet chocolate chips
  • 1 large egg, beaten
  • 1 tablespoon milk or water
  • Turbinado sugar or granulated sugar for sprinkling

Instructions

  1. In a large bowl, whisk together the flour and salt.
  2. Add the cold butter and shortening to the flour mixture. Use a pastry blender or your fingertips to cut the fat into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the ice water one tablespoon at a time, mixing gently after each addition until the dough just comes together.
  4. Turn the dough out onto a lightly floured surface, gather into a ball, then divide in half and flatten each half into a disc. Wrap tightly in plastic and refrigerate for at least 30 minutes.
  5. Roll out one disc of dough into a 12-inch circle and transfer it to a 9-inch pie plate. Trim edges, leaving a 1-inch overhang.
  6. Crimp edges of the crust using fingers or fork.
  7. Chill the crust in the refrigerator.
  8. In a large bowl, combine cherries, sugar, cornstarch, almond extract, lemon juice, and salt. Gently toss to coat.
  9. Fold in the chocolate chips.
  10. Pour the filling into the chilled pie crust.
  11. Roll out the remaining disc of dough into a 12-inch circle. Place it over the filling, trim edges, and crimp to seal.
  12. Cut several slits in the top crust to allow steam to escape.
  13. Brush the top crust with an egg wash made from egg and milk or water, and sprinkle with sugar.
  14. Preheat oven to 400°F (200°C). Bake for 15 minutes, then reduce temperature to 375°F (190°C) and bake for an additional 35 to 45 minutes until golden brown.
  15. Let the pie cool completely on a wire rack before slicing and serving.
