- 6 cups Rice Krispies cereal
- 10 oz mini marshmallows
- 3 tbsp unsalted butter
- 1/2 cup maraschino cherries, chopped
- 2 tbsp maraschino cherry juice from the jar
- 1/2 tsp almond extract (optional)
- 1/2 cup white chocolate chips (optional for drizzle or mix-in)
Instructions
- Prepare a 9×9 inch pan by lining it with parchment paper or greasing it lightly.
- In a large saucepan over medium heat, melt the butter carefully.
- Stir in the mini marshmallows and cook, stirring constantly until fully melted.
- Add the cherry juice and almond extract, stirring until the mixture turns pink.
- Remove from heat and quickly stir in the Rice Krispies cereal until well coated.
- Fold in the chopped maraschino cherries and optional white chocolate chips gently.
- Pour the mixture into the prepared pan and press gently with a spatula.
- Allow to cool completely before cutting into squares.
Notes
Be careful not to press the mixture too hard, or the treats will become rock hard.
