Description

  • ½ cup unsalted butter, melted and cooled
  • ½ cup granulated sugar
  • 1¼ cups all-purpose flour
  • Pinch of salt
  • 2 tbsp almond meal or crushed vanilla cookies
  • For the Filling:
  • ¾ cup whipping cream
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 3 tbsp granulated sugar
  • 2 tbsp all-purpose flour
  • 1 lb fresh cherries, pitted

Instructions

  1. Prepare the Crust: In a bowl, mix melted butter, sugar, flour, salt, and almond meal. Stir into a soft dough and press evenly into the tart pan, covering the bottom and sides. Chill in the fridge for 30–45 minutes.
  2. Make the Filling: Whisk together cream, eggs, vanilla, sugar, and flour. Spread the pitted cherries over the crust. Pour the custard filling evenly on top.
  3. Bake: Preheat oven to 350°F (175°C). Bake for 35–40 minutes, until filling is just set and center jiggles slightly.
  4. Serve & Store: Cool completely before serving. Dust with powdered sugar or serve with ice cream or custard. Store in fridge up to 4 days or freeze slices up to 2 months.

Notes

You can substitute cherries with berries, apricots, or plums. For a nutty touch, increase almond meal slightly or add a splash of almond extract to the filling.
