Description
Warm, buttery, and impossibly chewy — these cookies have a soft center, slightly crisp edges, and a deep caramel-like flavor from plenty of brown sugar.

- 1/4 cup (50g) granulated sugar

- 2 teaspoons pure vanilla extract
- 1 1/2 cups (180g) all-purpose flour, spooned and leveled
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (170g) optional mix-ins (chocolate chips or chopped nuts)

- Prepare baking sheets with parchment paper.
- Cream butter and sugars until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then add vanilla.

- Fold in optional mix-ins with a rubber spatula.
- Chill the dough covered in plastic wrap for at least 2 hours or overnight.
- Preheat oven to 375°F (190°C).
