Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/4 tsp salt

For Coating:

  • 2 tsp ground cinnamon
  • 1/4 cup granulated sugar

Optional Add-ins:

  • 1/2 cup chocolate chips
  • 1/4 cup dulce de leche for stuffing

Instructions

  1. Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract. Mix until fully combined.
  4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until a soft dough forms.
  6. Optional: fold in chocolate chips or prepare small amounts of dulce de leche for stuffing.
  7. Chill the dough in the refrigerator for 30 to 60 minutes.
  8. In a small bowl, mix the cinnamon and 1/4 cup of granulated sugar for coating.
  9. Scoop tablespoon-sized portions of dough, optionally stuff with dulce de leche, and roll into balls.
  10. Roll each dough ball in the cinnamon-sugar mixture.
  11. Place on the prepared baking sheet and bake for 9–11 minutes until the edges are lightly golden.
  12. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra indulgence, serve the cookies warm with a drizzle of dulce de leche or dip half in melted chocolate. Store in an airtight container for up to 5 days.
