- 2 tsp pumpkin or chai spice blend
- ½ tsp Baking soda
- ½ tsp salt
- 1 c (226g) European style unsalted Butter, browned and cool but still liquid
- 1 c (200g) light brown sugar
- ⅓ c (79ml) pure maple syrup
- 1 large egg yolk, room temperature
- ½ c (125g) canned pumpkin, blotted
- 2 tsp (10ml) vanilla extract
- ½ tsp (2.5ml) maple extract, optional
- Spiced sugar
- ½ c (100g) granulated sugar
- ½ tsp pumpkin or chai spice blend
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, pumpkin spice blend, baking soda, and salt. Set aside.
- In another bowl, combine the browned butter, brown sugar, and maple syrup, mixing well until smooth.
- Add in the egg yolk, canned pumpkin, vanilla extract, and maple extract (if using) to the butter mixture. Stir until completely combined.
- Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined.
- Use a cookie scoop to drop dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
