  • 2 ¼ c (270g) All-purpose flour
  • 2 tsp pumpkin or chai spice blend
  • ½ tsp Baking soda
  • ½ tsp salt
  • 1 c (226g) European style unsalted Butter, browned and cool but still liquid
  • 1 c (200g) light brown sugar
  • c (79ml) pure maple syrup
  • 1 large egg yolk, room temperature
  • ½ c (125g) canned pumpkin, blotted
  • 2 tsp (10ml) vanilla extract
  • ½ tsp (2.5ml) maple extract, optional
  • Spiced sugar
  • ½ c (100g) granulated sugar
  • ½ tsp pumpkin or chai spice blend

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the flour, pumpkin spice blend, baking soda, and salt. Set aside.
  3. In another bowl, combine the browned butter, brown sugar, and maple syrup, mixing well until smooth.
  4. Add in the egg yolk, canned pumpkin, vanilla extract, and maple extract (if using) to the butter mixture. Stir until completely combined.
  5. Gradually incorporate the dry ingredients into the wet ingredients, mixing until just combined.
  6. Use a cookie scoop to drop dough onto the prepared baking sheet, spacing them 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
