- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/4 cup granulated sugar (for topping)
- 1 tablespoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and 2 teaspoons of cinnamon.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Spread the batter evenly into the prepared baking pan.
- In a small bowl, mix together the 1/4 cup sugar and 1 tablespoon cinnamon for the topping. Sprinkle over the batter.
- Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before slicing into bars. Enjoy your chewy snickerdoodle cookie bars!
