Description

A delicious and easy meal made with tender chicken, creamy avocado, and melty cheese on toasted bread.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 ripe avocado, mashed
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 4 slices of bread (preferably sourdough or whole grain)
  • 1 tablespoon mayonnaise (optional)
  • Salt and pepper to taste
  • Butter (for grilling)

Instructions

  1. In a bowl, mix the shredded chicken, mashed avocado, mayonnaise, salt, and pepper until well combined.
  2. Heat a skillet over medium heat. Butter one side of each slice of bread.
  3. Assemble the sandwiches by placing a portion of the chicken-avocado mixture on the unbuttered side of one slice, then adding cheese on top.
  4. Top with another slice of bread, buttered side facing out.
  5. Cook in the skillet until golden brown and the cheese melts, about 4-5 minutes per side.
  6. Slice and serve warm.

Notes

Serve with a side of crispy chips or a fresh salad. Best consumed fresh but can be stored in an airtight container in the refrigerator.
