A delicious and easy meal made with tender chicken, creamy avocado, and melty cheese on toasted bread.
Ingredients

- 2 cups cooked chicken, shredded
- 1 ripe avocado, mashed
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- 4 slices of bread (preferably sourdough or whole grain)
- 1 tablespoon mayonnaise (optional)
- Salt and pepper to taste
- Butter (for grilling)
Instructions
- In a bowl, mix the shredded chicken, mashed avocado, mayonnaise, salt, and pepper until well combined.
- Heat a skillet over medium heat. Butter one side of each slice of bread.
- Assemble the sandwiches by placing a portion of the chicken-avocado mixture on the unbuttered side of one slice, then adding cheese on top.
- Top with another slice of bread, buttered side facing out.
- Cook in the skillet until golden brown and the cheese melts, about 4-5 minutes per side.
- Slice and serve warm.
Notes
Serve with a side of crispy chips or a fresh salad. Best consumed fresh but can be stored in an airtight container in the refrigerator.
