Ingredients

• 1 lb boneless chicken thighs (or breasts), cut into bite-sized pieces • 2 cups fresh broccoli florets (or thawed frozen broccoli) • 2 tbsp cornstarch (for coating the chicken) • 1 small yellow onion, thinly sliced • 2 cloves garlic, minced • 1 tbsp fresh ginger, minced • 2 tbsp soy sauce • 1 tbsp oyster sauce • 1 tbsp brown sugar • ¾ cup water • 1½ tbsp neutral oil (canola or vegetable oil) • ¼ tsp crushed red pepper flakes (optional, for heat) • Black pepper, to taste


Instructions

1. **Prepare the Chicken:** Toss chicken pieces in a bowl with cornstarch, a pinch of salt, and black pepper until evenly coated. 2. **Cook the Chicken:** Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add chicken in a single layer (cook in batches if needed). Let it sear without moving for 2–3 minutes, then flip and cook until golden brown. Transfer chicken to a plate. 3. **Sauté Aromatics:** Add the remaining oil to the pan. Stir in garlic, ginger, and sliced onion. Cook for about 30 seconds until fragrant. 4. **Stir-Fry the Broccoli:** Add broccoli florets to the pan and stir-fry for 2–3 minutes until crisp-tender. 5. **Make the Sauce:** In a bowl, whisk together soy sauce, oyster sauce, brown sugar, water, and red pepper flakes (if using). 6. **Combine & Cook:** Return the chicken to the skillet with the broccoli. Pour in the sauce and stir everything together. Let simmer for 2–3 minutes until sauce thickens and coats the ingredients. 7. **Serve Immediately:** Best served over rice, noodles, or cauliflower rice.

Notes

For extra flavor, add a splash of sesame oil at the end. You can also use bell peppers or snap peas instead of (or in addition to) broccoli.
