A creamy and comforting chicken casserole with fresh spinach and cream cheese, all baked to perfection.

- 2 large boneless skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach, packed
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup Parmesan cheese, optional
Instructions
- Pat chicken dry and season with half of the salt and black pepper.
- Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat and sear chicken cubes for 3-4 minutes per side until golden brown. Remove chicken and set aside.
- Reduce heat to medium. Add the remaining olive oil if needed, sauté minced garlic for 1 minute until fragrant, then add fresh spinach and stir until wilted (about 3-5 minutes).
- Add softened cream cheese to the skillet, stirring until smooth and fully incorporated.
- Return the seared chicken to the skillet, stirring in Italian seasoning, remaining salt and pepper, half of the shredded mozzarella cheese, and Parmesan cheese if using. Mix gently until well coated in the sauce.
- Preheat oven to 375°F (190°C). If not using an oven-safe skillet, transfer the mixture to a 9×13 inch baking dish, spread evenly, and top with the remaining mozzarella cheese.
- Bake for 20-25 minutes until bubbly and golden brown.
- Let the casserole rest for 5-10 minutes before serving.
Notes
Make sure not to overcrowd the skillet when searing the chicken and always allow the cream cheese to soften before use.
