Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Season the chicken breasts with salt and pepper, then sear each side until golden brown and cooked through. Remove from the skillet and set aside.
  2. In the same skillet, add minced garlic and sauté for a minute until fragrant.
  3. Add the fresh spinach and cook until wilted.
  4. Pour in the chicken broth and let it simmer for a few minutes.
  5. Stir in the heavy cream and Parmesan cheese, mixing until well combined.
  6. Return the chicken to the skillet, coating it with the creamy spinach sauce.
  7. Cook for 2 more minutes until heated through.

For a lighter version, use half-and-half instead of heavy cream. You can add other vegetables like mushrooms or bell peppers for extra flavor.
