- 2 tbsp olive oil
- 1 1/2 lb chicken breast
- 1 1/2 tsp paprika
- 1 1/2 tsp oregano
- 1 tsp garlic powder
- 1/2 tsp thyme
- 1/2 tsp black pepper
- 1/2 tsp salt
- 12 oz gluten free farfalle pasta
- 4 tbsp butter
- 2 tsp dry shallots
- 2 tsp Italian seasoning
- 1/2 cup chicken broth
- 2 tbsp gluten free 1:1 flour
- 3 cups heavy cream
- 12 oz shredded parmesan
- 1/4 cup pasta water
- 1/2 tsp salt
- 1 tsp garlic powder
Instructions
- In a large pot, boil pasta according to the directions on the box for al dente.
- Mix all chicken seasonings in a small bowl.
- Pound the chicken to thin it out slightly, then season both sides with the spice mix.
- Heat olive oil in a large skillet over medium heat and sear the chicken for about 5 minutes on each side.
- Lower heat, cover the skillet, and cook for an additional 10-12 minutes until internal temperature reaches 165°F.
- Remove chicken and place it on a cutting board.
- Melt butter in the same pan, add shallots, garlic powder, and Italian seasoning; simmer for one minute.
- Add gluten-free flour, stir well, and scrape the bottom of the pan.
- Pour in chicken broth and heavy cream, whisk until smooth.
- Stir in shredded parmesan until melted and the sauce reaches desired consistency.
- Toss in cooked pasta and mix to coat evenly, adding pasta water as needed.
- Slice cooked chicken and add it to the pasta, stirring everything together before serving.
Notes
For added flavor, marinate the chicken beforehand. Adjust garlic and cheese to taste.
