Description

A delightful, gluten-free meal featuring tender chicken breast and creamy, cheesy pasta, perfect for any night of the week.


Ingredients

  • 2 tbsp olive oil
  • 1 1/2 lb chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 oz gluten free farfalle pasta
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp gluten free 1:1 flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. In a large pot, boil pasta according to the directions on the box for al dente.
  2. Mix all chicken seasonings in a small bowl.
  3. Pound the chicken to thin it out slightly, then season both sides with the spice mix.
  4. Heat olive oil in a large skillet over medium heat and sear the chicken for about 5 minutes on each side.
  5. Lower heat, cover the skillet, and cook for an additional 10-12 minutes until internal temperature reaches 165°F.
  6. Remove chicken and place it on a cutting board.
  7. Melt butter in the same pan, add shallots, garlic powder, and Italian seasoning; simmer for one minute.
  8. Add gluten-free flour, stir well, and scrape the bottom of the pan.
  9. Pour in chicken broth and heavy cream, whisk until smooth.
  10. Stir in shredded parmesan until melted and the sauce reaches desired consistency.
  11. Toss in cooked pasta and mix to coat evenly, adding pasta water as needed.
  12. Slice cooked chicken and add it to the pasta, stirring everything together before serving.

Notes

For added flavor, marinate the chicken beforehand. Adjust garlic and cheese to taste.
