- 8 ounces spaghetti
- 2 cups chicken broth
- 1 cup diced tomatoes
- 1 cup mixed fresh vegetables (like bell peppers and zucchini)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, and sauté until soft.
- Add the diced chicken and cook until browned.
- Stir in the diced tomatoes, chicken broth, spaghetti, mixed vegetables, Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and cover, simmering until spaghetti is cooked through.
- Stir well to combine, and serve hot.
Notes
For extra flavor, top with grated Parmesan cheese. Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage. Reheat with a splash of water or broth.
