Ingredients

  • 8 ounces spaghetti
  • 2 cups chicken broth
  • 1 cup diced tomatoes
  • 1 cup mixed fresh vegetables (like bell peppers and zucchini)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, and sauté until soft.
  3. Add the diced chicken and cook until browned.
  4. Stir in the diced tomatoes, chicken broth, spaghetti, mixed vegetables, Italian seasoning, salt, and pepper.
