Description

A quick and delicious one-pan dinner featuring savory chicken sausage, tender orzo, bright tomatoes, and creamy feta.


Ingredients

  • 1 pound chicken Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry orzo pasta
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley, for garnish
  • Salt and freshly ground black pepper to taste

Instructions

  1. Remove casings from the sausage. Crumble the sausage into a large skillet over medium heat. Add olive oil and cook until browned (about 8–10 minutes). Transfer cooked sausage to a plate and set aside.
  2. In the same skillet, add chopped onion and cook until softened (about 5 minutes). Add minced garlic and chopped red bell pepper; cook another 3–5 minutes.
  3. Pour in undrained diced tomatoes, chicken broth, oregano, basil, and red pepper flakes. Stir well and bring to a gentle simmer. Reduce heat to low and simmer for 10 minutes.
  4. Add dry orzo to the skillet and stir to coat with the sauce. Increase heat slightly and cook until orzo is tender (about 8–10 minutes), adding more broth or water if needed.
  5. Remove skillet from heat. Stir in the cooked sausage and crumbled feta until warmed. Serve immediately, garnished with chopped parsley.

Notes

Best served immediately for optimal texture and flavor. Can store leftovers in an airtight container in the fridge for 3–4 days.
