- 1 onion, chopped
- 2 carrots, chopped
- 3 potatoes, chopped
- 2 large tomatoes, skinned
- Fresh parsley, chopped
- Fresh chives, chopped
- Vegetable broth or hot water (just enough)
- Salt and pepper to taste
Instructions
- In a large pot, add the chicken and cover with vegetable broth or hot water.
- Bring to a boil and then reduce the heat.
- Add chopped onion, carrots, and potatoes to the pot.
- Cook until the vegetables are tender.
- Stir in the tomatoes, parsley, and chives.
- Season with salt and pepper to taste.
- Simmer for an additional 10 minutes before serving.
Notes
Use fresh vegetables for the best flavor. You can make the soup thicker by adding more potato or blending a portion of the soup.
