Ingredients

  • 3 potatoes, chopped
  • 2 large tomatoes, skinned
  • Fresh parsley, chopped
  • Fresh chives, chopped
  • Vegetable broth or hot water (just enough)
  • Salt and pepper to taste

Instructions

  1. In a large pot, add the chicken and cover with vegetable broth or hot water.
  2. Bring to a boil and then reduce the heat.
  3. Add chopped onion, carrots, and potatoes to the pot.
  4. Cook until the vegetables are tender.
  5. Stir in the tomatoes, parsley, and chives.
  6. Season with salt and pepper to taste.
  7. Simmer for an additional 10 minutes before serving.

Notes

Use fresh vegetables for the best flavor. You can make the soup thicker by adding more potato or blending a portion of the soup.
