Description

A comforting chicken stew loaded with vegetables and rice, perfect for family meals.


Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups Tropical Sun pre-fluffed USA Easy Cook Rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe pan, heat olive oil over medium heat.
  3. Add the chopped onion, garlic, carrots, and bell pepper, and sauté until softened.
  4. Season the chicken pieces with paprika, salt, and pepper.
  5. Place the chicken in the pan, browning on all sides.
  6. Add the rice and stir to coat with the juices.
  7. Pour in the chicken broth and bring to a boil.
  8. Cover the pan with a lid or foil and transfer to the oven.
  9. Bake for 45-50 minutes, or until the chicken is cooked through and the rice has absorbed the broth.
  10. Remove from the oven, garnish with fresh parsley, and serve.

Notes

For a thicker stew, add a tablespoon of cornstarch mixed with water towards the end of cooking. You can also use boneless chicken for quicker cooking.
