Ingredients

- 1 whole chicken, cut into pieces
- 2 cups Tropical Sun pre-fluffed USA Easy Cook Rice
- 4 cups chicken broth
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, sliced
- 1 bell pepper, chopped
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe pan, heat olive oil over medium heat.
- Add the chopped onion, garlic, carrots, and bell pepper, and sauté until softened.
- Season the chicken pieces with paprika, salt, and pepper.
- Place the chicken in the pan, browning on all sides.
- Add the rice and stir to coat with the juices.
- Pour in the chicken broth and bring to a boil.
- Cover the pan with a lid or foil and transfer to the oven.
- Bake for 45-50 minutes, or until the chicken is cooked through and the rice has absorbed the broth.
- Remove from the oven, garnish with fresh parsley, and serve.
Notes
For a thicker stew, add a tablespoon of cornstarch mixed with water towards the end of cooking. You can also use boneless chicken for quicker cooking.
