- 2 chicken breasts, diced
- 2 medium sweet potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, garlic, and ginger; sauté until onions are translucent.
- Add the diced chicken and cook until browned on all sides.
- Stir in the curry powder and turmeric, cooking for another minute.
- Add sweet potatoes and coconut milk; bring to a simmer.
- Cover and cook for about 20 minutes, or until sweet potatoes are tender.
- Season with salt and pepper, and garnish with fresh cilantro before serving.
Notes
For extra flavor, marinate the chicken in some curry powder and yogurt before cooking. Adjust the spice level by adding red pepper flakes or using a spicier curry powder.
