Ingredients

  • 1 red bell pepper, diced
  • 2 cups shredded Mexican cheese
  • ½ cup mayonnaise
  • ½ cup sour cream
  • Juice of ½ a lime
  • Salt and pepper to taste
  • 9.25 oz bag of Chili Cheese Fritos, coarsely crushed
  • Optional: fresh cilantro for garnish

Instructions

  1. In a large mixing bowl, combine corn, diced red bell pepper, shredded cheese, mayonnaise, sour cream, lime juice, salt, and pepper.
  2. Mix well until everything is evenly coated.
  3. Cover and refrigerate until ready to serve.
  4. Just before serving, fold in the crushed Chili Cheese Fritos to keep them crunchy.
  5. Garnish with fresh cilantro and serve immediately.

Notes

For best texture, wait to mix in the Fritos until right before serving. Add diced jalapeños if you prefer extra heat.
