Ingredients

- 2 (15 oz) cans of corn, drained
- 1 red bell pepper, diced
- 2 cups shredded Mexican cheese
- ½ cup mayonnaise
- ½ cup sour cream
- Juice of ½ a lime
- Salt and pepper to taste
- 9.25 oz bag of Chili Cheese Fritos, coarsely crushed
- Optional: fresh cilantro for garnish
Instructions
- In a large mixing bowl, combine corn, diced red bell pepper, shredded cheese, mayonnaise, sour cream, lime juice, salt, and pepper.
- Mix well until everything is evenly coated.
- Cover and refrigerate until ready to serve.
- Just before serving, fold in the crushed Chili Cheese Fritos to keep them crunchy.
- Garnish with fresh cilantro and serve immediately.
Notes
For best texture, wait to mix in the Fritos until right before serving. Add diced jalapeños if you prefer extra heat.
