Ingredients

- 2 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup diced bell peppers
- 1 cup corn (fresh or canned)
- 1/2 cup chipotle ranch dressing
- 4 large flour tortillas
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.
- Coat the chicken breasts with the spice mixture.
- Grill the chicken for about 6-7 minutes on each side or until cooked through.
- Let the chicken rest before slicing it.
- In a tortilla, layer rice, black beans, grilled chicken, bell peppers, corn, and drizzle with chipotle ranch dressing.
- Wrap the tortilla tightly around the fillings.
- Serve warm and enjoy!
