Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup ricotta cheese
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 egg
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. In a bowl, combine graham cracker crumbs and melted butter. Press mixture into the bottom of the prepared baking dish to form a crust.
  3. In another bowl, beat together ricotta cheese, cream cheese, powdered sugar, vanilla extract, egg, and cinnamon until smooth.
  4. Fold in the mini chocolate chips.
  5. Pour the cheesecake filling over the crust and spread evenly.
  6. Bake in the preheated oven for 30-35 minutes or until set. Let cool, then refrigerate for at least 2 hours before slicing into bars.
  7. Serve chilled and enjoy.
