Instructions
Preheat oven to 350°F (175°C).
In a medium bowl, mix graham cracker crumbs, ¼ cup sugar, and ¼ teaspoon salt. Add melted butter and stir to combine. Press firmly into a 9×13 inch baking pan.
Bake the crust for 8-10 minutes until set. Let cool slightly.
In a large bowl, beat cream cheese until smooth, then gradually add ¾ cup sugar. Mix in eggs, sour cream, and vanilla extract. Fold in mini chocolate chips.
Pour cheesecake filling over the cooled crust, spreading evenly.
In another bowl, cream together softened butter, ½ cup granulated sugar, and ½ cup brown sugar. Beat in an egg and 1 teaspoon vanilla.
In a medium bowl, whisk together flour, baking soda, and ¼ teaspoon salt. Gradually mix into wet ingredients. Fold in chocolate chips.
Crumble chocolate chip cookie dough over cheesecake filling.
Bake for 35-40 minutes until the topping is golden brown and cheesecake is set around edges but jiggly in center.
Let cool in the oven with door ajar for 1 hour. Then cool to room temperature and chill in the refrigerator for at least 4 hours before serving.
