Decadent dessert combining rich chocolate brownies topped with airy chocolate mousse, perfect for any chocolate lover.

- 1 cup (2 sticks) unsalted butter, melted
- 2 cups granulated sugar
- 1 cup unsweetened cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 tablespoon vanilla extract
- 4 large eggs
- 1 cup all-purpose flour
- 1 cup chocolate chips (semi-sweet or dark)
- 12 ounces semi-sweet chocolate, finely chopped
- 1/4 cup strong brewed coffee, hot
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 large eggs, separated
- 1/4 cup granulated sugar
- 1 1/2 cups heavy cream, cold
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it and dusting it with flour.
- Melt the butter in a large bowl and add the granulated sugar, cocoa powder, salt, and baking powder; whisk until combined.
- Add the tablespoon of vanilla extract and mix.
- Add the eggs one at a time, mixing well after each.
- Gradually add the flour and mix until just combined.
- Fold in the chocolate chips and pour the batter into the prepared baking pan, spreading evenly.
- Bake for about 25-30 minutes until a toothpick comes out with moist crumbs.
- Let the brownies cool completely in the pan.
- While cooling, prepare the chocolate mousse by placing the finely chopped chocolate in a heatproof bowl and pouring the hot coffee over it; let it sit for a minute and then whisk until smooth.
- Add a teaspoon of vanilla extract and 1/4 teaspoon of salt to the chocolate mixture.
- Separate the eggs. Whisk the egg yolks with 1/4 cup of sugar until pale and thickened.
- Drizzle the chocolate mixture into the egg yolk mixture while whisking constantly.
- In another clean bowl, beat the egg whites until stiff peaks form.
- Fold the whipped egg whites into the chocolate mixture in two additions.
- Whip the heavy cream until stiff peaks form and fold into the chocolate mixture in two additions.
- Once the brownies are cool, pour the mousse over the top and spread evenly.
- Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- To serve, lift the brownies out using the parchment overhang and cut into squares.
- Dust with cocoa powder and serve optionally with chocolate shavings or berries.
Notes
Use high-quality chocolate for the best flavor and refrigerate overnight for the best texture.
