Description

Decadent dessert combining rich chocolate brownies topped with airy chocolate mousse, perfect for any chocolate lover.


Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup chocolate chips (semi-sweet or dark)
  • 12 ounces semi-sweet chocolate, finely chopped
  • 1/4 cup strong brewed coffee, hot
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 1/2 cups heavy cream, cold

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing it and dusting it with flour.
  2. Melt the butter in a large bowl and add the granulated sugar, cocoa powder, salt, and baking powder; whisk until combined.
  3. Add the tablespoon of vanilla extract and mix.
  4. Add the eggs one at a time, mixing well after each.
  5. Gradually add the flour and mix until just combined.
  6. Fold in the chocolate chips and pour the batter into the prepared baking pan, spreading evenly.
  7. Bake for about 25-30 minutes until a toothpick comes out with moist crumbs.
  8. Let the brownies cool completely in the pan.
  9. While cooling, prepare the chocolate mousse by placing the finely chopped chocolate in a heatproof bowl and pouring the hot coffee over it; let it sit for a minute and then whisk until smooth.
  10. Add a teaspoon of vanilla extract and 1/4 teaspoon of salt to the chocolate mixture.
  11. Separate the eggs. Whisk the egg yolks with 1/4 cup of sugar until pale and thickened.
  12. Drizzle the chocolate mixture into the egg yolk mixture while whisking constantly.
  13. In another clean bowl, beat the egg whites until stiff peaks form.
  14. Fold the whipped egg whites into the chocolate mixture in two additions.
  15. Whip the heavy cream until stiff peaks form and fold into the chocolate mixture in two additions.
  16. Once the brownies are cool, pour the mousse over the top and spread evenly.
  17. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  18. To serve, lift the brownies out using the parchment overhang and cut into squares.
  19. Dust with cocoa powder and serve optionally with chocolate shavings or berries.

Notes

Use high-quality chocolate for the best flavor and refrigerate overnight for the best texture.
