Instructions

  1. Prepare the Crust: Roll out the tart dough and press into a 9–10 inch tart pan. Cover with parchment and fill with pie weights or dried beans. Blind bake at 375°F (190°C) for 20 minutes until lightly golden. Let it cool completely.
  2. Make the Chocolate Filling: Heat ¾ cup of heavy cream in a saucepan until it gently simmers. Pour over chopped chocolate in a bowl and let sit for 1–2 minutes. Whisk until smooth and stir in vanilla extract.
  3. In a separate bowl, whip the remaining 1½ cups of heavy cream with sugar until stiff peaks form. Gently fold the whipped cream into the chocolate ganache until fully incorporated and smooth.
  4. Assemble the Tart: Pour the chocolate cream filling into the cooled tart crust and smooth the surface with a spatula.
  5. Decorate with Strawberries: Arrange thinly sliced strawberries in concentric circles over the chocolate filling.
  6. Chill: Refrigerate the tart for 2–4 hours until the filling is set.
  7. Serve: Garnish with fresh mint leaves or a dusting of powdered sugar before serving.

Notes

You can prepare this tart a day ahead. Try swapping strawberries with raspberries or a mix of berries for variety. For a richer filling, use a splash of liqueur like Grand Marnier or Chambord in the ganache.
