Instructions
- Preheat oven to 350 degrees F and grease a 9 by 5-inch loaf pan with nonstick cooking spray.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
- In a large bowl, stir together eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
- Gradually mix dry ingredients into wet ingredients. Do not overmix.
- Fold in shredded zucchini and 3/4 cup chocolate chips until just combined.
- Pour batter into the prepared pan and sprinkle remaining chocolate chips on top.
- Bake for 50 to 60 minutes. Test with a toothpick for doneness.
- Let it cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
