Instructions

  1. Preheat oven to 350 degrees F and grease a 9 by 5-inch loaf pan with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda, and sea salt.
  3. In a large bowl, stir together eggs, melted butter, oil, vanilla extract, and brown sugar until smooth.
  4. Gradually mix dry ingredients into wet ingredients. Do not overmix.
  5. Fold in shredded zucchini and 3/4 cup chocolate chips until just combined.
  6. Pour batter into the prepared pan and sprinkle remaining chocolate chips on top.
  7. Bake for 50 to 60 minutes. Test with a toothpick for doneness.
  8. Let it cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
