Ingredients
1 bunch kale, washed and chopped
1 cup dried cranberries
2 cups cubed stale bread
2 tablespoons olive oil
1/4 cup grated Parmesan cheese
1/4 cup Caesar dressing
Salt and pepper to taste

Instructions
Preheat the oven to 350°F (175°C).
Toss the bread cubes with olive oil, salt, and pepper. Spread on a baking sheet and bake for 10-15 minutes until golden brown. Toss with dried cranberries.
In a large bowl, combine the chopped kale and Caesar dressing, massaging the kale for 1-2 minutes until softened.
Add the cranberry croutons and Parmesan cheese, tossing until well combined. Adjust seasoning if necessary.
Serve immediately as a fresh festive side salad.
