Ingredients

  • 1 bunch kale, washed and chopped
  • 1 cup dried cranberries
  • 2 cups cubed stale bread
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Toss the bread cubes with olive oil, salt, and pepper. Spread on a baking sheet and bake for 10-15 minutes until golden brown. Toss with dried cranberries.
  3. In a large bowl, combine the chopped kale and Caesar dressing, massaging the kale for 1-2 minutes until softened.
  4. Add the cranberry croutons and Parmesan cheese, tossing until well combined. Adjust seasoning if necessary.
  5. Serve immediately as a fresh festive side salad.
