Ingredients
Scale
- 1 bunch kale, washed and chopped
- 1 cup dried cranberries
- 2 cups cubed stale bread
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- 1/4 cup Caesar dressing
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Toss the bread cubes with olive oil, salt, and pepper. Spread on a baking sheet and bake for 10-15 minutes until golden brown. Toss with dried cranberries.
- In a large bowl, combine the chopped kale and Caesar dressing, massaging the kale for 1-2 minutes until softened.
- Add the cranberry croutons and Parmesan cheese, tossing until well combined. Adjust seasoning if necessary.
- Serve immediately as a fresh festive side salad.
Notes
For best results, add croutons just before serving to maintain their crunch.
