Description Festive mini cheesecakes with a rich cream cheese filling and graham cracker crust, decorated to resemble Christmas trees.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 – 2 tablespoons milk
  • Green gel food coloring
  • Holiday sprinkles
  • Edible gold stars

Instructions

  1. Preheat oven to 325°F (163°C) and prepare muffin tin or mini cheesecake pan.
  2. Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the pan and bake for 5 minutes.
  3. Beat cream cheese and sugar until smooth; add sour cream, vanilla, and eggs until well incorporated.
  4. Pour cheesecake batter over crusts and bake for 15-18 minutes until set but slightly jiggly.
  5. Cool at room temperature, then chill in the refrigerator for at least 2 hours.
  6. Make frosting by beating butter, powdered sugar, vanilla, and milk until smooth; tint with green food coloring.
  7. Pipe frosting into tree shapes on each cheesecake and decorate with sprinkles and gold stars.
