Description
Festive mini cheesecakes with a rich cream cheese filling and graham cracker crust, decorated to resemble Christmas trees.

- 1 ½ cups graham cracker crumbs
- 3 tablespoons granulated sugar
- 6 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 tablespoons sour cream
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 1–2 tablespoons milk
- Green gel food coloring
- Holiday sprinkles
- Edible gold stars
Instructions
- Preheat oven to 325°F (163°C) and prepare muffin tin or mini cheesecake pan.
- Combine graham cracker crumbs, sugar, and melted butter in a bowl; press into the pan and bake for 5 minutes.
- Beat cream cheese and sugar until smooth; add sour cream, vanilla, and eggs until well incorporated.
- Pour cheesecake batter over crusts and bake for 15-18 minutes until set but slightly jiggly.
- Cool at room temperature, then chill in the refrigerator for at least 2 hours.
- Make frosting by beating butter, powdered sugar, vanilla, and milk until smooth; tint with green food coloring.
- Pipe frosting into tree shapes on each cheesecake and decorate with sprinkles and gold stars.
Notes
Use room temperature cream cheese for a smoother filling. These cheesecakes can be made ahead of time and stored in the refrigerator.
