  • Author: Elsa
  • Total Time: 30 minutes
  • Yield: 20 cookies 1x
  • Diet: Vegetarian

Description

Soft, cinnamon-coated cookies with a cheesecake-flavored dough base. These churro cheesecake cookies are quick to make and perfect for cinnamon sugar lovers.

Ingredients

Scale

Dry Ingredients:

  • 1½ cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

Wet Ingredients:

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ¼ cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup cream cheese, softened

Coating:

  • ¼ cup granulated sugar
  • 1 tbsp ground cinnamon

Optional Topping:

  • Cream cheese glaze or caramel drizzle (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, baking powder, and salt. Set aside.
  3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar for 2–3 minutes until light and fluffy.
  4. Add the egg and vanilla extract, and beat until fully incorporated.
  5. Mix in the softened cream cheese until the batter is smooth.
  6. Gradually add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  7. Use a cookie scoop to portion the dough into balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12–15 minutes, or until the edges are lightly golden. Avoid overbaking to keep them soft.
  9. Immediately after baking, roll the warm cookies in the cinnamon-sugar mixture to coat them evenly.
  10. Cool the cookies on a wire rack. Optionally, drizzle with cream cheese glaze or caramel before serving.

Notes

For best results, do not chill the dough—this ensures the soft, slightly puffy texture. Rolling in cinnamon sugar while warm helps the coating stick better.
