- 1 package refrigerated sugar cookie dough
- 4 oz cream cheese, softened
- ¼ cup granulated sugar
- ½ tsp vanilla extract
- ¼ cup melted butter
- ¼ cup cinnamon sugar (¼ cup sugar mixed with 1 tsp cinnamon)
Optional Add-ins:
- Pinch of nutmeg
- Caramel drizzle (for topping)
- Use turbinado sugar instead of regular for extra crunch
Instructions
- Preheat oven: Preheat to 350°F (175°C) and line a baking sheet with parchment paper.
- Form cookie bases: Roll the sugar cookie dough into small balls. Place them on the baking sheet and gently flatten each one.
- Prepare filling: In a bowl, mix softened cream cheese, granulated sugar, and vanilla extract until smooth.
- Fill the cookies: Spoon a small dollop of the cheesecake mixture onto the center of each cookie dough base.
- Bake: Bake for 10–12 minutes, or until edges are golden and the centers are set.
- Finish with coating: While cookies are still warm, brush the tops with melted butter, then roll or sprinkle generously with cinnamon sugar to coat.
- Cool slightly: Allow cookies to cool for a few minutes before serving. Optional: drizzle with caramel just before serving.
Notes
For extra flavor, mix a pinch of nutmeg into the cinnamon sugar. Cookies are best eaten fresh but can be stored in an airtight container for up to 3 days.
