Description

  • 1/2 teaspoon salt
  • 1 cup unsalted butter, browned and cooled
  • 1 cup packed brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1215 squares of semi-sweet or dark chocolate
  • For coating: 1/2 cup sugar + 2 teaspoons ground cinnamon

Instructions

  1. Make the dough: In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. In a separate large bowl, beat the browned butter with the brown and white sugars until creamy. Mix in the eggs one at a time, then add the vanilla. Gradually incorporate the dry ingredients. Chill the dough for 30–45 minutes.
  2. Prepare the chocolate: Cut chocolate into squares if using a bar. Freeze for 10 minutes to help prevent melting during baking.
  3. Assemble cookies: Scoop 1 tablespoon of dough, flatten, place a chocolate square in the center, and seal the dough around it. Roll each dough ball in the cinnamon sugar mixture.
  4. Bake: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Place the cookies on the sheet, spaced apart, and bake for 10–12 minutes until the edges are golden.
  5. Cool: Let cookies cool on the pan for 5 minutes before transferring to a wire rack to finish cooling.

Notes

For extra indulgence, drizzle with melted chocolate or serve warm with vanilla ice cream. Freeze any unbaked dough balls for up to 1 month — bake from frozen, adding 1–2 minutes to the bake time.
