Description
These soft and chewy churro cookies are coated in cinnamon sugar for a warm, nostalgic flavor reminiscent of the classic fair treat. Made with a buttery dough and a hint of spice, they’re perfect for dessert tables, holidays, or everyday indulgence.

- 2 ¼ cups all-purpose flour
- 1 cup unsalted butter (softened)
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract

- 1 tbsp ground cinnamon
For the cinnamon sugar coating:
- ½ cup granulated sugar
- 1 tbsp ground cinnamon
Instructions
- Make the Dough: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually mix the dry ingredients into the wet ingredients until fully combined.
- Chill the Dough: Cover the bowl with plastic wrap and refrigerate for 30–60 minutes to allow the dough to firm up.
- Preheat & Prepare: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. In a small bowl, mix the cinnamon sugar coating ingredients together.
- Shape & Coat: Scoop the dough into 1.5-inch balls. Roll each ball in the cinnamon sugar coating until well covered. Place the dough balls on the prepared baking sheets about 2 inches apart.
- Bake: Bake the cookies for 10–12 minutes, until the edges are golden and the centers are still soft. Let the cookies cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
- Optional Finishes: Once cooled, drizzle with melted white chocolate or serve warm with a scoop of vanilla ice cream for extra indulgence.
Notes
For slightly crispier cookies, bake for the full 12 minutes. Store in an airtight container at room temperature for up to 4 days. You can also freeze dough balls for up to 2 months and bake as needed.
