Instructions

  1. Make the Dough: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract.
  2. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Gradually mix the dry ingredients into the wet ingredients until fully combined.
  3. Chill the Dough: Cover the bowl with plastic wrap and refrigerate for 30–60 minutes to allow the dough to firm up.
  4. Preheat & Prepare: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. In a small bowl, mix the cinnamon sugar coating ingredients together.
  5. Shape & Coat: Scoop the dough into 1.5-inch balls. Roll each ball in the cinnamon sugar coating until well covered. Place the dough balls on the prepared baking sheets about 2 inches apart.
  6. Bake: Bake the cookies for 10–12 minutes, until the edges are golden and the centers are still soft. Let the cookies cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.
  7. Optional Finishes: Once cooled, drizzle with melted white chocolate or serve warm with a scoop of vanilla ice cream for extra indulgence.

Notes
